Delicious Muesli Bars with Pulp
Save this recipe for your next juicing session! (It also works without pulp if you prefer.)
Ingredients
100 g rolled oats
70 g walnuts
70 g pumpkin seeds
50 g pecans
Roughly chop everything and place in a large bowl. Then add:
100 g juice pulp (e.g., beetroot, apple, carrot)
50 g goji berries
50 g dried plums, chopped
15 g chia seeds
80 g maple syrup
70 g melted coconut oil
1 tsp vanilla paste
Preparation
Mix everything well and press the mixture firmly into a baking pan lined with parchment paper.
Bake for 20 minutes at 180°C (top and bottom heat). Let it cool slightly, then refrigerate for a few hours to set.
Once firm, cut into bars — your homemade muesli bars are ready! They’ll keep for several days in the fridge.
